Pepa pig jello! OUTDOORSMAN BBQ version.

A recipe from Mario Tardif BBQ OUTDOORSMAN!

Ingredients:

5 lbs pork belly without rind
Project S Sugar Daddy Bacon Spices
Original Sugar Daddy Bacon Sauce
Butter without salt
Honey
Extra virgin olive oil


Preheat the smoker to 225/250 with pecan, cherry or maple wood

Remove excess fat on your side, but leave a little.
Make 2 inch square cubes with the side
Add 3 tbsp of olive oil on the sides and add your SDB Project S rub
Place the cubes on a rack directly in the smoker.
Smoking for 3 hours uncovered
After three hours in the smoker, remove the cubes, and place them in an aluminum fries pan
add the SDB Original sauce, butter the honey and mix well.
Cover the dripping pan and return to the smoker.
Cook another 90 minutes (approx) or until internal temperature of 200 F to 203F
Remove the aluminum foil, and let it smoke for a good 15 minutes to let the sauce thicken.
